Weekend Shopping Classic Christmas Decor

Will you be sprinkling seasoning on your turkey this week?

I am! In fact, our bird will be brined for at least 16 hours, spatchcocked, slathered in butter and finally, sprinkled with plenty of seasoning!

If you are interested in my brine, here it is.

  • cold water
  • 1 cup brown sugar
  • 1 cup salt
  • seasonings like rosemary, thyme, sage, garlic, onion and poultry seasoning

First I heat about 2 cups of water and then add the brown sugar. I heat it long enough to melt the sugar. Add the salt and the seasonings. Then I allow the solution to completely cool.

Next, I add the fresh turkey to a large clean cooler. I pour the brine over the turkey, add lots of ice cubes and fill the cooler with cold water to cover the turkey.

I check on the cooler throughout the day and make sure there is still ice and I add ice if needed. The turkey stays in the brine for about 16-18 hours and then I roast it as usual!

You can add some additional flavor by substituting some of the water for orange juice, apple cider or apple juice. You can also use fresh squeezed oranges and the zest!

BTW, I’m not a fancy cook by any means but I did roast a couple of cornish hens like rotisserie chickens in my air fryer. I even sprinkled them with real orange zest!
