Easy Oven Roasted Chicken
This easy homemade chicken will become a family favorite. Have the chicken for dinner and then save the bones for easy chicken stock.

Preheat oven to 450*
Rinse the whole chicken inside and out.
Pat chicken dry with clean paper towels.
Rub olive oil over the whole chicken.
Sprinkle the spices over the whole chicken.
Salt and pepper the inside and outside of the chicken.
Place whole chicken in enameled cast iron dutch oven, no lid.
Place dutch oven in the preheated oven, turn the temp down to 350*
Roast the chicken for 1 hour, 15 minutes to 1 hour, 45 minutes internal temp reaches 165*.
I use my stainless steel kitchen sink to rinse the chicken but first I thoroughly clean the sink! Be sure to clean the sink again once you are finished rinsing the chicken.
Use a food thermometer inserted in the thickest part of the breast.
Allow the chicken to rest for a few minutes before slicing.
Save the juices and bones for the best homemade chicken stock for soup!
